I've been looking around everywhere and I cant find one place that knows how much hp the structures have.

I believe I saw a thread long ago on Reddit, but I can't seem to find it by quickly looking. =[

Well, I guess you can always check some of the structures on try mode unless if they are modified. Just take a hero like Sgt. Hammer and seige it until the structure dies. Count how many times you hit it and multiply that with your aa damage and you get the general amount of health some of the structures have.
